“If I had one day to spend in Dalmatia, I would aim for summer as it is the perfect time of year to enjoy the beautiful Croatian coast. You would start your day early with coffee and breakfast by the sea, listening to the surrounding nature wake up. Early mornings are the best time to go to the farmers market so drive or bike and enjoy the vast selection of fresh fruits, vegetables, and fish. After you drop off your fresh purchases at the villa, head over to Plitvice lakes. Great for super hot days, the fresh breeze, stunningly beautiful lakes and waterfalls and many walking paths scattered throughout the area makes this a great day trip for you and your family. Grab a late lunch at a local restaurant and head back to the villa for an afternoon nap by the pool. Later that night cook up a nice dinner with the produce you bought that very morning, or have a chef come in and make you an authentic Croatian dinner. Enjoy the views in Primosten with a bottle of wine surrounded by friends and family and take in what it’s like to do as the Croatians do.”

After that divine experience and after a healthy breakfast your day begins with a big choice – spend the day inland, biking through the towns, visiting Krka Waterfalls National park, or venture out into the sea and visit the many islands above water, and view the majestic life below it. The decision is not easy, but let’s decide to dedicate this perfect day to the sea and rent a boat to begin your adventure.”

“In the morning you will have breakfast on the terrace of your luxury villa while taking in the stunning view of the sea. After, you will be picked up and taken to the docks where your Captain will take you out onto the crystal blue waters. He will take you around some of the most famous Croatian islands and you will discover hidden bays, breath- taking views, and local fishing spots. Get dropped off on the island of your choice and walk the town, visit the markets and dine on a fresh fish meal which was just swimming mere hours before. Go back onto the boat and enjoy the sun while your Captain continues to ferry you and your group around the islands. Once you feel up to it, he will take you to a private winery located on one of the islands where you will be treated to a wine tasting and learn about the unique differences of Croatian wines. After you had your fill of wine, you will be taken back to your villa where a local chef has been preparing an authentic Croatian meal. Relax around the villa as the smells of spices make their away out of the kitchen and into the surrounding area calling you to the table. After dinner, enjoy a nice bottle of wine you picked up from the winery and enjoy the cool evening of the Croatian coast as the stars begin to come out one by one.”

“After breakfast at your villa, your perfect day would begin with being picked up and transferred to Split where you’d meet your tour guide. After a cup of coffee on Split’s incredible waterfront called the Riva, the guide will take you through the old parts of Split to truly experience the wonder of this city. After the tour, your island hopping trip begins! You will be taken to the island of Hvar, to shop and explore this ancient island community. After sightseeing, the boat will take you to your next destination, the Pakleni Islands. Not just one island, but rather a family of 16. You’ll cruise through the islands and stop and have a swim to cool off from the Croatian sun. Make landfall and enjoy a late lunch, some more shopping, and a cocktail at one of the best cocktail bars on the Adriatic Coast.”

“Your perfect day starts with a breakfast by the sea, sitting and breathing in the fresh sea air just in front of the villa. A day is not perfect without a boat ride – the captain of a yacht would pick you up at the villa and take you for an island hopping adventure. Spending a few hours exploring caves and snorkeling around the island of Vis makes you perfectly hungry for lunch and the Budikovac island. There is a retired captain living there, with his own vineyard and freshly caught fish and lobster each day – no menu, just whatever is fresh that day – you just sit and enjoy the best food from the Adriatic. After a day of island hopping, as you return to the villa a private chef would wait for you. After pairing a bottle of an exquisite Croatian sparkling wine with the most amazing sunset view, you would enjoy an intimate dinner at the terrace to end your perfect day.”

“If I had one day to immerse guests in my region, we would start with an early visit to the bustling Cork city and a visit to the famous English Market. The Queen visited this Market just a couple of years ago and gave it her royal approval! I like to admire the faces at the various food stalls here and embrace the sights, smells, and sounds of this commercial hub. There are so many fantastic personalities at the market and a walk through really immerses you in the market culture. After the market visit, we would walk to the pretty Shandon Bells Tower overlooking the city. This tower has a local pet name of ‘ The Four Faced Liar’ as none of its four clocks tell the same time. It is always fun to try your hand at ringing the bells here which can then be heard across the city! My favourite place to go for lunch is the beautiful seaside town of Kinsale just a short drive from Cork city. We would dine at one of the famous fish restaurants and taste the catch from the night before. After lunch, a walk to the awe-inspiring Old Head of Kinsale golf course is a perfect way to take in the powerful sea air. In the evening, the best way to immerse oneself in the local culture is to grab a stool at the bar of a small country pub and order a Guinness, pulled by a veteran Guinness pourer! We would listen to some local musicians playing traditional Irish music and if we were feeling brave enough, we would partake in a spot of Irish ceilí dancing. As the Irish say, “ceol agus craic”- “music and fun”.”
